The Hummingbird House is an old fashioned and quaint breakfast, lunch, and catering cafe. We offer a selection of homemade traditional and unique breakfast and lunch items.

The Hummingbird House is a restaurant that is owned and operated by family; it is owned by Elizabeth Biron and Sheryl Biron. Elizabeth started her culinary career at Penn State where she received a Bachelor of Fine Arts degree in Hotel Restaurant Institutional Management with a focus in Nutrition and Human Resources. She has followed an impressive career path helping others open and manage different operations but always had a dream of opening her own restaurant.

As if by fate Sheryl stumbled upon a listing for the sale of the former Tea Hive establishment and the two couldn’t believe how the philosophy could not be a better fit. Elizabeth had always dreamed of opening a family oriented place that could represent two of the great legacies of her life. Her father, Mike Biron, loved making breakfast and it would frequently be a special family time. Her grandmother, “Mema” Elizabeth Lopatesky, was a wonderful cook who spent her later days making the local priests lunch weekly.

The Hummingbird House is not only built on a menu of family traditions and recipes but it has been incorporated into the restaurant name and logo. The hummingbird has a significant meaning because the bird would frequent the family after Mike Biron passed. The family feels that the hummingbird would visit to let them know that the future would be great. In addition to the bird being apart of the logo the strong mountain behind it is the beautiful Burgess Adirondack Mountain where Mike’s ashes rest.

We, as a family, decided to do what Dad loved best, giving back to the community. We created the Mike Biron Field of Dreams Foundation, a foundation to light the Hampton Township Recreation Fields in Hampton Township. The field of dreams was an idea Dad had to light the local ballfields so children could be safe while playing at “The Pit”.

We hope that you will join us for not only a special breakfast or lunch but for special treatment. We put the emphasis on people, both patrons and staff. We focus on enabling our staff to provide each of our guests the fresh food and friendly service that they have come to expect of us.

History

The Hummingbird House was known as the James Mattison House. This house was purchased in the late 1700’s, probably around 1793, by James Mattison who had come to Sussex County between 1780-1785. The farm, a very large parcel with divisions over the years, remained in the Mattison family until at least 1869. An addition was added to the house in the early to mid 1800’s.

Older deeds show that the rites of passage probably went from Jonathan Hampton, John Chetwood, and John Blanchard, James Morrow, Henry Hoover and then on to James Mattison. Other deeds show that smaller parcels of land were sold off from the original farm.

A man named Samuel Washer owned the farm in the early 1920’s; here he raised ducks and geese. He made a pond from one of the numerous springs in the area.

When he sold the property, he sold his geese and duck houses in 3 section of about 30 feed to George Snook, Mr. Bales and William Commings.

I bet they are glad that I moved away since I was not a paying customer at the time. Seriously, congrats on the new family place and realizing your dream. I know everyone is very proud of you.   4. I decided to try the new Hummingbird House on Tuesday, their opening day, and I was delightfully surprised. When I first walked in I immediately felt a very homey vide. The hostess told me I could sit wherever I’d like. I chose to sit in the second of the three rooms of tables. When I sat down at one of the 5 quite unique tables in the room it almost felt as if I was sitting in my own kitchen. I perused the breakfast and lunch menus and had a hard time picking between all of the choices. I eventually decided on bacon, eggs, wheat toast and peanut butter and homemade jelly French toast. My girlfriend ordered a cheeseburger. Our meals came and had a very appealing presentation. I began with my bacon and it tasted like high quality home cooked bacon as opposed to the normal junk you’d get at a diner. The eggs were good. The French toast really took the cake tho. It was normal French toast but topped with peanut butter and homemade jelly and to top it off it came with a side of real maple syrup at no extra cost. I was beyond happy with my meal. I also tried my girlfriend’s cheeseburger. According to the waitress the burgers are a blend of prime rib and sirloin with a bit of chuck for flavor and the first bite sure did prove it. Hands down best burger around. Our waitress was Sondra. She was very friendly, attentive and patient after we took the better part of 20 minutes to order. For dessert was had a chocolate peanut butter cup cupcake which was deliciously rich and a strawberry shortcake cupcake that was refreshingly light and sweet. At the completion of our meal we walked around the main level of the building. It’s a very unique, very old building with a lot of character. When we went to pay the cash register is located across the room from the open kitchen which is always a nice sign at a restuarant. All in all it was a wonderful experience and it is definitely going to be my go to spot for breakfast and lunch.

  6. Had lunch here on Saturday. The entire place has been renovated and looks great. Bright and cheery and homey feel about it. Staff were very friendly and efficient. The waitress recommended the house burger claiming it to be the best anywhere. She did not exaggerate! Plump, juicy and flavorful. Worth the trip and reasonably priced. Leave room for dessert though! The view from the back porch is awesome.

  7. A friend and I met for breakfast last week. It was so delightful, the atmosphere was lovely, the personnel were warm and friendly, and the breakfast was wonderful! You don’t get “real maple syrup” any place around here…..BUT you do at the Hummingbird House….. quality place!! I will be back for sure and wish you the very very best……you have started out with raving comments from everyone! God Bless You and I am sure Mike is smiling on you all!!! He was a wonderful man!   10. Visited for the first time today…. And are we glad we did. Breakfast was wonderful. Food was delicious, fresh and prepared with care. Service was great…. Highly recommend!

    My husband and I are very happy that you have opened this wonderful restaurant here in Sussex County. We love the ambiance and decor of the place. You’ve done an incredible job with the renovations. The food is great. Not only is it tasty, but very healthy. We mostly eat organic foods and are thrilled to know that you go to great measures to provide health alternatives to your customers. From the fresh organically eggs that you serve to the salads. Everything is so fresh that you can taste the difference. Your restaurant is a wonderful destination, a place to meet up with good friends, family and business associates. We love the liveliness of the place. It ‘s always a good sign that everyone is having a great time. The staff is friendly, courteous with great sense of humor. May God continue to bless you.

    Wow I’ve now been six times to have breakfast it’s amazing every time. Very friendly staff that makes every one feel welcomed.. the desserts are fabulous too. I’ll be a regular visitor for sure.

  13. Been to your establishment for lunch twice…intend to be there tomorrow to try breakfast. Never disappointing, great food, nice menu selection and great service (good coffee too).

  14. Brought my son, my daughter and my daughter’s fiance here for brunch today. I had heard many good things about the place and had the added incentive that it is owned and run by the family of a very good friend with whom I used to work who passed away. Well, all of the good reviews were surpassed by the reality of the experience. Two words…Amaretto Cream… It is a family recipe and is absolutely delicious. I had the french toast (some of the best ever) with the cream on top. My daughter had the day’s special french toast stuffed with the amaretto cream and bacon. Both were absolutely delicious. The bacon was excellent and cooked to perfection. Nice and crispy. And the sausage patties, recommended by our waitress, were wonderful. My son, who is 17 and not prone to wax eloquent about food, moaned as he bit into his french toast sandwich and then coveted my french toast and cream until I was forced to give him a slice. My daughter’s fiance raved about the pancakes which were light and fluffy. Service was very friendly and fast, but not rushed so we felt okay about just relaxing for a while and chatting. Had the added pleasure of meeting the chef, Elizabeth, who came out to our table. We will definitely be back again! It is wonderful to have it so close by.

  15. Been there twice. Once with my daughter and once with my daughter, her husband, and my son. They all loved it. My daughter liked it so much she is having her baby shower there. The food is great and the family the run the place are very nice and friendly. Can’t wait to try the breakfast.
